  • 200 g gluten-free flour
  • 3 eggs
  • 50 g fine cornmeal
  • 1 tablespoon oil
  • 1 teaspoon salt
  • some water (for diluting)
  • 100 g grated Emmental cheese
  • 1 large onion
  • Butterfat

Making

    Put the flour, eggs, and cornmeal in a bowl and mix well, then add the oil and salt and stir until a firm dough forms. Thin it slightly with water (but the consistency should still be that of a firm batter), then let it rest at room temperature for about 20 minutes so the dough can swell.

    Bring a large pot of salted water to a boil. Press the dough through a spaetzle press in small batches, bring to a boil briefly, and transfer to a colander using a slotted spoon.

    Slice the onions and sauté them in a little butter until golden brown. Layer the hot spaetzle with the cheese and onions in a baking dish. Then bake in the oven at 200 °C for about 10 minutes.

❤️ Tip

If you don't have a spätzle press on hand, you can also spread the dough on a cutting board and scrape it into the boiling water with a wide knife. Best served with a delicious salad.
