ingredients

Serves 1

  • 4 tablespoons (120 g) gluten-free flour blend
  • 1/2 teaspoon gluten-free baking powder
  • 1 pinch of salt
  • 4 tablespoons milk (40 g)
  • 1 tablespoon olive oil
  • 100 g chopped tomatoes
  • Salt
  • Pepper
  • Oregano
  • 2–3 slices of salami
  • a small piece of carrot and zucchini
  • 1/2 ball of mozzarella

Making

  1. 01
Mix together the flour, salt, baking powder, milk, and olive oil, then press the mixture into an oven-safe or microwave-safe dish. Season the chopped tomatoes with oregano, salt, and pepper to taste, and spread them over the dough. Dice the vegetables into very small pieces and spread them over the pizza along with the salami. Finally, top with thin slices of mozzarella.
  2. 02
Cook in the microwave for 1–2 minutes at about 800 watts.
  3. 03
Alternatively, you can finish baking the pizza in a preheated oven at 225 °C (top and bottom heat) for about 12 minutes.
  4. 04
If you use a glass storage container for baking, you can easily transport the pizza. Enjoy!

❤️ Tip

I recently tried the version shown here. For this, use chopped tomatoes (as shown above) and an egg as toppings, then pop it in the oven. After baking, top the pizza with bresaola and arugula. Just experiment with different combinations—it’s a great way to use up leftover vegetables, for example.

Did you know?

Mozzarella originated in southern Italy and was traditionally made from buffalo milk. Thanks to its mild flavor, it goes well with almost any topping.

Our Tip

The crust stays soft in the microwave—if you prefer it crispier, place the pizza under the oven broiler for a short time at the end.
