ingredients

Makes about 8 rolls

  • 350 g dark gluten-free flour blend
  • 300 g quark
  • 2 small eggs
  • 1 teaspoon salt
  • just under 200 ml of water
  • 2/3 packet of yeast

Making

  1. 01
Mix all the ingredients in a bowl, let stand for 30 minutes, and stir again. Then shape the rolls—preferably with wet hands—and let them rise for another 30 minutes. Finally, bake the rolls at 200°C for about 25–30 minutes.

❤️ Tip

This recipe also works if you use 1 packet of baking powder instead of yeast; in that case, you don't need to let the dough rise. The rest of the steps remain the same.

Our Tip

Gluten-free doughs don't rise as much as wheat doughs—let the rolls rest long enough in a warm place, and feel free to shape them a little smaller.
