  • 3 tablespoons ground flaxseed
  • 140 ml milk
  • 300 g almond flour
  • 75 g coarsely chopped walnuts
  • 60 g candied orange peel
  • 60 g candied lemon peel
  • 1 teaspoon lemon zest
  • 2 tsp baking powder (gluten-free)
  • 130 g agave syrup
  • 50 g maple syrup
  • 50 g brown sugar
  • 3 teaspoons apricot jam
  • 3 tablespoons gingerbread spice (gluten-free)
  • 24 wafers (gluten-free)
  • 100 g dark chocolate coating (gluten-free)
  • 15 g coconut oil (solid)

Making

    Day 1: Finely grind the flaxseeds in a mortar, then mix them with the milk and set aside to soak. Next, combine the almond flour, walnuts, candied lemon peel, candied orange peel, baking powder, and lemon zest in a bowl and mix well. Beat the prepared flaxseed-milk mixture with an electric mixer, then stir in the brown sugar and apricot jam. Now stir in the almond flour mixture one spoonful at a time until a sticky brown batter forms. Next, place the wafers on parchment paper and spoon a tablespoon of batter onto each one. Let them dry for 24 hours.

    Day 2: Preheat the oven to 160 °C (top and bottom heat) and bake the prepared gingerbread cookies for 15 minutes. After baking, let the gingerbread cookies cool. Roughly chop the chocolate coating and melt it with the coconut oil in a double boiler. Briefly dip the top side of each gingerbread cookie into the chocolate coating, let them cool, and enjoy.

❤️ Tip

You can also substitute hazelnuts or almonds for the walnuts. The gingerbread tastes even better after it has had time to sit.
