Makes about 30 cookies

  • 100 g buckwheat flour
  • 100 g almond flour
  • 1 teaspoon gluten-free baking powder
  • 100 g softened butter
  • 1 egg
  • 4 tablespoons honey or raw cane sugar
  • 1 pinch of salt

Making

    Knead the flours and baking powder together with the butter, egg, honey, and a pinch of salt until a smooth dough forms.

    Shape the dough into a ball, wrap it in a kitchen towel, and let it rest in the refrigerator for one hour. After one hour, preheat the oven to 180 °C (top and bottom heat) and line a baking sheet with parchment paper.

    Then roll out the dough on a floured work surface (gluten-free, of course) and cut out the cookies.

    Place the cookies on the parchment paper and bake for about 10 minutes until golden brown. Let them cool, then decorate them with frosting or chocolate as desired.

If you prefer a fresher flavor, you can either add lemon zest to the batter or mix lemon juice into the frosting.
