Line a springform pan (20–24 cm) with parchment paper or grease it. Preheat the oven to 180 °C (160 °C convection).

Finely grate the carrots using a grater.

Next, in a mixing bowl, beat the butter, sugar, vanilla extract, and salt until light and fluffy. Add the eggs and continue mixing. Combine the flour with baking powder, cinnamon, and nutmeg, then add this mixture along with the ground almonds. Finally, fold in the grated carrots until the mixture is smooth and uniform.

Pour the batter into the prepared baking pan and bake in a preheated oven for 40–50 minutes (test with a toothpick). Remove from the oven and let cool in the pan on a wire rack, then carefully remove from the pan—the cake is very moist!

Frosting: Mix the cream cheese with powdered sugar and lemon zest, then spread it on the cake before serving. Decorate with pistachios and marzipan carrots, if desired.
