  • 2 tablespoons of germ oil
  • 1 onion
  • 1 banana
  • 1 apple
  • 200 ml vegetable broth (gluten-free)
  • 400 ml coconut milk
  • 2 tablespoons curry powder (gluten-free)
  • 2 tsp potato or cornstarch
  • 1 teaspoon ground ginger
  • Salt
  • Pepper
  • Sugar and, if desired, lemon juice

Making

    Heat the oil in a pot and sauté the finely diced onion; add the finely diced apple and sauté it along with the onion.

    Prepare the vegetable broth in a 1-liter measuring cup, then add the coconut milk and ginger and stir in the cornstarch. Remove the pot from the stovetop and add the liquid while stirring. Return the pot to the stove and bring the sauce to a boil while stirring. Mash the banana with a fork and gently fold it into the sauce. Season to taste with salt, pepper, sugar, and a little lemon juice if desired. This curry sauce goes great with poultry, fish and rice, or even a gluten-free currywurst with homemade fries.

This fruity curry sauce goes wonderfully with rice, chicken, or steamed vegetables. Be sure to check that the curry powder and vegetable broth are gluten-free :)
