Salad

Serves 2–3

  • 1 red bell pepper
  • Black olives from a jar (as many as you like)
  • 0.5 cucumber
  • 1–2 scallions or 1 red onion
  • 2–3 sprigs of flat-leaf parsley
  • 125 g feta
  • 5–6 Cherry Roma tomatoes
  • 4–5 lettuce leaves or 1 bunch of arugula
  • 2–3 slices of gluten-free whole-grain baguette

Dressing

  • 1.5 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 0.5 tsp honey or agave syrup
  • Salt
  • Pepper

Making

    Clean and wash the bell peppers, remove the seeds, and cut away the white membranes from the flesh. Cut the bell peppers into small cubes.

    Peel the onion, cut it in half, and slice it into thin strips. Cut the cherry tomatoes in half lengthwise. Cut the cucumber into small squares. Wash the parsley, pat it dry, and finely chop it along with the stems; tear the lettuce leaves and wash them. Crumble the feta a little finer and add it to the mixture. Drain the olives and fold them in.

    For the dressing, mix the vinegar with the honey, stir in the olive oil, and season with salt and pepper. Combine all the prepared salad ingredients with the dressing in a salad bowl and season to taste with salt and pepper. Bake the gluten-free baguette according to the package directions, let it cool, and enjoy it sliced alongside the salad.

This goes well with a freshly baked gluten-free baguette. If you like, let the salad sit for a few minutes before serving so the dressing can coat everything nicely :)
