Ingredients for 2 servings

  • 100 g gluten-free flour
  • 4 eggs
  • 220 ml milk or soy/almond milk
  • 2 tablespoons butter or vegetable shortening
  • 1 pinch of salt
  • 70 g sugar
  • 1 tablespoon powdered sugar
  • 1 tablespoon raisins

Making

    First, use a whisk to mix the gluten-free flour with the milk until you have a smooth batter. Separate the eggs and thoroughly stir the egg yolks into the batter along with a pinch of salt.

    Next, beat the egg whites and sugar in a mixing bowl with a mixer until stiff peaks form, then gently fold them into the batter. Pour the batter evenly into a pan heated with butter and sprinkle with raisins.

    As soon as the batter has almost set on the bottom, flip the Kaiserschmarrn and cook it on the other side for a few minutes. Then tear it into bite-sized pieces, sprinkle with powdered sugar, and let it caramelize a little.

Kaiserschmarrn is an Austrian dessert said to be named after Emperor Franz Joseph I. It traditionally includes caramelized raisins.

Don't tear the Schmarrn into pieces until the bottom is golden brown, and caramelize it with a little sugar—that way, it will be slightly crispy on the outside.
