  • 120 g almond flour
  • 1 teaspoon baking powder
  • a pinch of salt
  • 230 ml coconut milk or buttermilk
  • 2 tablespoons neutral oil
  • 3 eggs

    Separate the eggs and beat the egg whites with a pinch of salt until stiff. Combine the flour and baking powder in a bowl, then stir in the egg yolks, oil, and coconut milk or buttermilk. Once the mixture is smooth, gently fold in the beaten egg whites. Once the batter is ready, let it rest in the refrigerator for half an hour. Then preheat the waffle iron and brush it with oil. Pour 2–3 tablespoons of batter into the waffle iron and bake until golden brown, about 8–10 minutes.
